These tacos are a fun, easy meal to share with family and friends. Prepare the ingredients and let everyone build their own tacos with the toppings they love. This recipe includes homemade taco seasoning and sauce, alternatively you can also use store-bought options. The essential oils used in this recipe are Citrus Fresh, black pepper, lemon, lime, orange and tangerine. Simply choose the ones that are suited to your taste palate.
TIP Use corn tortillas for a gluten-free option. Swap flathead for salmon or prawns and for a vegetarian option, try tofu, halloumi, black beans or roasted veggies.
NOTE This spice blend is mild and family-friendly. Adjust chili and cayenne to taste. To reduce the sharpness of raw onion, soak copped onion in water for a few minutes and drain well.

Ingredients
- Fish
- olive oil or coconut oil (for cooking)
- 300 – 350g flathead or other firm white fish (boned, skin removed, cut into pieces)
- sea salt
- freshly ground pepper (to taste)
- 1 tbsp taco seasoning
- 8 small tortillas/taco shells (flour or corn, preferably organic)
- Fresh Citrus Tomato Salsa
- 2 medium tomatoes, chopped
- ½ red onion, finely chopped
- fresh coriander, finely chopped
- 1 spring onion, finely chopped
- ½ tsp cumin seeds (optional)
- sea salt and freshly ground black pepper (to taste)
- 1 – 2 drops Citrus Fresh oil (to taste)
- 1 drop black pepper oil (to taste)
- Additional Toppings
- shredded red or white cabbage
- sliced or cubed avocado
- shredded cos lettuce
- red onion, chopped
- Taco Seasoning
- ¼ cup mild chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp ground cumin
- 2 tbsp cumin seeds (optional)
- 1 tsp dried oregano and/or thyme
- 2 tsp paprika or mild smoked paprika
- 1 tbsp sea salt
- 1 tbsp freshly ground black pepper
- ½ tsp cayenne powder (optional)
- ½ tsp chili flakes (optional)
- Taco Sauce Ingredients
- ¾ cup mayonnaise or Greek yoghurt
- 1 tbsp tomato paste
- 1 – 2 tbsp honey or maple syrup (optional, to taste)
- 1 tbsp finely chopped red chili (optional)
- 1 tsp Mexican spice blend/taco seasoning (optional)
- sea salt and freshly ground pepper
- 1-2 drops citrus fresh essential oil or lemon, lime, orange or tangerine essential oil (to taste)
- 1 drop black pepper oil (to taste)
Instructions
- 1. Combine the Taco Seasoning ingredients in a bowl. Store in a sealed jar in a cool place (keeps up to 4 weeks).
- 2. Mix the Citrus Tomato Salsa ingredients in a bowl. Taste and adjust salt and essential oils if needed. Chill until serving.
- 3. In a separate bowl, make the taco sauce by mixing all sauce ingredients together. Chill until serving
- 4. Prep additional toppings and refrigerate until serving.
- 5. Prep the fish by cutting into bite-sized pieces.
- 6. Generously season the fish with salt, pepper and taco seasoning. Heat oil in a frying pan over medium-high heat.
- 7. Cook fish in batches (about 2 minutes per side) until golden and cooked through. Keep warm in an oven (approx. 100°C).
- 8. Warm tortillas or taco shells as per packet instructions.
- 9. Serve fish with salsa, toppings and sauce. Individually assemble as preferred.
