Best-Ever Einkorn Banana Bread

Ingredients:

  • 1/2 cup butter, melted
  • 1 cup organic evaporated cane juice crystals
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups Einkorn Flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup sour cream
  • 2 very ripe bananas, mashed
  • 1/2 cup walnuts (optional)

 

Directions:

  1. Preheat your oven to 350 degrees F (175 degrees C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, stir together the melted butter and cane juice crystals.
  3. Add the eggs and vanilla; mix well.
  4. In a separate bowl, combine the Einkorn Flour, baking soda, and sea salt. Stir into the butter mixture until smooth.
  5. Fold in the sour cream and bananas (and walnuts, if using). Spread evenly into the prepared pan.
  6. Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
  7. Slice and enjoy!

  • I need to watch my sugar and calorie intake. So, I used erythritol instead of evaporated cane juice crystals and light butter. The best lower carb dessert I have ever made. Very delicious - thank you for the initial recipe.

  • Great recipe! Very moist and tender. I substituted some of the cane juice with honey and molasses. Love using Einkorn flour instead of GMO wheat flour.

  • Hi I am looking for bread machine recipe for einkorn. I tried a loaf on the shorter cycle for basic bread but wondering if that is to many kneads not enough rising because it is quite low very heavy tastes amazing. Should i just the whole wheat setting on my machine which has a longer rise time

In addition to Einkorn Flour, the Einkorn Pancake Mix contains Brown rice flour, Amaranth flour, Tapioca flour, Sorghum flour (Sorghum bicolor), and Dhokla flour (Indian flour made from chickpeas).   • I used Einkorn Flour for Irish Brownies and it was awesome. I use it to make pancakes and it works super!

  • I used Einkorn Flour in my bread machine one time. While the bread was dense, it was good. I've also used it for pancakes. They aren't as fluffy but they taste great. In each of these I just substituted 1 for 1 of regular flour.
