This cooler is perfect for starting the new year off on a healthy note. It’s a wonderful mocktail to share at gatherings or great for a refreshing afternoon drink. You can use sparkling apple juice or a lemon/lime sparkling juice to create this light and refreshing drink.
TIP You’ll need 1 large or 2 smaller mangos and a 2.5cm (approx.) piece of ginger (cut into smaller pieces and no need to peel) to make the puree. You can substitute sparkling water for the sparkling juice if you prefer a lighter less sweet cooler or just use less fruit juice.
NOTE You can make the base for these coolers a few hours to a day ahead and chill until you’re ready to serve. If you are not preparing the base ahead of time, then chill all ingredients well before making the drinks. Before making the drinks, you can rim the glasses by dipping them in a little of the mango & ginger puree and then in sugar. Just reserve 2 – 3 tbsp of the puree if you are rimming the glasses. Use coconut sugar in place of regular sugar, if you prefer.

- 1 large or 2 smaller mangos (peeled, seeded and cut into pieces)
- 2.5cm piece of ginger (cut into smaller pieces, no need to peel)
- 2 tbsp fresh lemon juice (to taste)
- 1 – 2 tbsp maple syrup, honey or agave syrup (to taste)
- 4 – 6 drops of lemon oil (to taste)
- Ingredients for finishing the Cooler
- 2 cups sparkling apple juice (or other light-coloured sparkling fruit juice)
- ½ cup sparkling water or soda water (optional, for topping up the glasses, if needed)
- Optional Serving Suggestions
- Sugar (preferably organic) or coconut sugar (for rimming the glasses)
- Thin lemon slices or wedges
- Thin mango slices or small cubes
- Mint, basil or thyme leaves
Instructions
- 1. To make the mango and ginger puree: Place all the puree ingredients in a high-speed blender with a little water to help it blend (approx. 2 – 3 tbsp) and blend until well combined. If it is still too thick add a little more water, but do not make it too thin. Then strain out any larger pieces and chill until you are ready to make the drinks. (Reserve a little of the puree, 2 – 3 tbsp, if rimming the glasses).
- 2. Before making the drinks, you can decorate the rim the glasses with a little mango & ginger puree and sugar. Place a little of the puree in a shallow dish or plate and place sugar on another dish or plate, dip the rim of the glasses in the puree and then the sugar and set aside while you make the drinks.
- 3. In a glass jug or large jar pour in the puree and then add the sparkling juice and gently stir well to combine. Then add in some ice and gently stir to chill the mixture.
- 4. Add a little ice to the glasses and evenly divide the cooler between the 4 glasses. You can top up the glasses with a little sparkling water or soda water, if desired. You can serve in tall glasses over ice or shaken with ice and strained into lovely smaller glasses.
- 5. Add a slice or two of lemon, a mango slice and/or a mint leaf or other fresh herbs to the glass, if desired and serve.
